Easy Tuscan Tortellini

This 30-minute Tuscan Tortellini is perfect for a weeknight meal, filled with delicious summer vegetables and white beans in a creamy tomato sauce. It is a versatile dish so the veggies can be switched up to your liking and meat can be added. You can also try using other pasta or gnocchi instead of tortellini.
I love this dish in the summer. I use fresh zucchini and spinach from my garden in it. Yellow squash can also be used or any type of green. Experiment with it, that is the beauty of this dish!

What ingredients will I need to make the best Tuscan Tortellini?
- Tortellini – I usually use the four cheese tortellini, but choose any kind you like. There are many different options out there for tortellini!
- Fresh Spinach – If you do not have fresh spinach, frozen will work absolutely fine in this recipe! Just keep in mind, frozen spinach tends to be watery so it is probably best to cook it on the side and drain the excess liquid prior to putting it in the dish.
- Zucchini – I love zucchini in the summer! It is readily available at local grocery stores and grows easily in gardens.
- White beans – Beans such as cannellini beans or great northern beans work awesome in this dish. I love that they add texture and creaminess and not to mention, they are packed full of plant-based protein.
- Onion and Garlic – To give this dish a more robust flavor.
- Diced Tomatoes – I typically use the Italian diced tomatoes with basil, garlic and oregano.
- Basil – Fresh is best! But in a pinch, you can use dried basil.
- Cream – Heavy cream can be used for this recipe or if you prefer the dish to be lighter, opt for half and half instead.
- Parmesan Cheese – Freshly grated Parmesan cheese is always the best but as a time saver feel free to use the pre-grated.

Do not want to use tortellini? Try this dish with other types of pasta such as penne, farfalle, shells and my personal favorite, gnocchi! Rice would also be a yummy replacement.
Mix up the vegetables- you can add yellow squash, any type of greens, bell peppers, green beans or any other vegetable that you have on hand.
Need a protein boost? Feel free to add sausage, chicken or a different type of meat that you prefer!
Want to make this dish a bit lighter? Replace the heavy cream with milk or half and half. It will still be delicious!
Instructions on how to make this easy Tuscan Tortellini dish:

- In a medium sized pot, heat water to boil for the tortellini. Cook the tortellini according to the package.
- In a deep skillet, heat the olive oil on medium heat. Add the onion and cook for about 1-2 minutes. Add the garlic and cook until fragrant, about another 1-2 minutes.
- Next, stir in the zucchini and sauté for about 2-3 minutes. Mix in the diced tomatoes and the beans. Cover and allow it to cook for about 5 minutes or until the vegetables are soft.
- Once it is finished cooking, stir in the cream, Parmesan cheese, spinach and fresh basil. Cook until the spinach is wilted. Turn off the heat.

- Mix in the cooked tortellini and top it with the grated Parmesan cheese and more fresh basil as a garnish. Serve immediately and enjoy!

- ½ onion chopped
- 2 garlic cloves minced
- 1 small zucchini chopped
- 5 ounces fresh spinach
- ¼ cup heavy cream
- ¼ cup Parmesan cheese grated
- 2 tbsp fresh basil chopped, plus more for garnish
