Easy Tuscan Tortellini
This 30-minute Tuscan Tortellini is perfect for a weeknight meal, filled with delicious summer vegetables and white beans in a creamy tomato sauce.

- 10 ounces Cheese tortellini
- 1 tbsp olive oil
- 1 15 ounce can cannellini beans drained
- 1 15 ounce can Diced tomatoes
- ½ onion chopped
- 2 garlic cloves minced
- 1 small zucchini chopped
- 5 ounces fresh spinach
- ¼ cup heavy cream
- ¼ cup Parmesan cheese grated
- 2 tbsp fresh basil chopped, plus more for garnish
In a medium sized pot, heat water to boil for the tortellini. Cook the tortellini according to the package.
In a deep skillet, heat olive oil on medium heat. Add the onion and cook for about 1-2 minutes. Add the garlic and cook until fragrant, about another 1-2 minutes. Stir in the zucchini and sauté for about 2-3 minutes.
Mix in the diced tomatoes and beans. Cover and allow to cook for about 5 minutes or until the vegetables are soft.
Stir in the cream, Parmesan cheese, spinach and basil. Cook until the spinach is wilted. Turn off the heat.
Stir in the cooked tortellini. Top it with grated Parmesan cheese and more fresh basil as a garnish. Serve immediately.
- Switch up the veggies and add any that you would like!
- Need more protein? Try adding sausage, chicken or another kind of meat.
