Easy Tuscan Tortellini

This 30-minute Tuscan Tortellini is perfect for a weeknight meal, filled with delicious summer vegetables and white beans in a creamy tomato sauce.

Ingredients
  

  • 10 ounces Cheese tortellini
  • 1 tbsp olive oil
  • 1 15 ounce can cannellini beans drained
  • 1 15 ounce can Diced tomatoes
  • ½ onion chopped
  • 2 garlic cloves minced
  • 1 small zucchini chopped
  • 5 ounces fresh spinach
  • ¼ cup heavy cream
  • ¼ cup Parmesan cheese grated
  • 2 tbsp fresh basil chopped, plus more for garnish

Instructions
 

  • In a medium sized pot, heat water to boil for the tortellini. Cook the tortellini according to the package.
  • In a deep skillet, heat olive oil on medium heat. Add the onion and cook for about 1-2 minutes. Add the garlic and cook until fragrant, about another 1-2 minutes. Stir in the zucchini and sauté for about 2-3 minutes.
  • Mix in the diced tomatoes and beans. Cover and allow to cook for about 5 minutes or until the vegetables are soft.
  • Stir in the cream, Parmesan cheese, spinach and basil. Cook until the spinach is wilted. Turn off the heat.
  • Stir in the cooked tortellini. Top it with grated Parmesan cheese and more fresh basil as a garnish. Serve immediately.

Notes

  • Switch up the veggies and add any that you would like!
  • Need more protein? Try adding sausage, chicken or another kind of meat.
  • Rather than using tortellini, experiment with other types of pasta, rice or gnocchi!
