Easy Vegetable Frittata

This easy vegetable frittata is inexpensive to make and very versatile. There are so many different variations of this dish and it can easily be served as a breakfast, lunch or light dinner meal.

i absolutely love a good frittata! One that I whip up for my family and myself when I have a lot of random veggies leftover in my fridge that need to be used up. It is literally the ultimate solution to a weeknight meal and is also a great make-ahead meal. I will often make it on a Sunday night to eat for breakfast or lunch throughout the week.

What is a frittata?

It is an Italian dish that is similar to quiche but without the crust, making it an easier and quicker dish to whip up. It is basically an “egg pie” with different ingredients of your choice added to it, baked in a pie plate then served in slices. It is the perfect dish to serve to a crowd or bring to a brunch party!

Frittata is a great dish that you can basically add any vegetable, cheese or meat to that you have on hand. Below are a few different variations that you can try!

Veggies: For this particular recipe, I used bell peppers, red onion and baby kale. But any vegetable of your choice can be used.  Spinach, tomatoes, asparagus, broccoli, yellow potatoes and zucchini are all super tasty in a frittata!
Meat: For the carnivores in your life, you can add chopped bacon, sausage or ham.
Cheese: This recipe uses shredded cheddar cheese but you can also try many different cheeses like American, Swiss, pepper jack for an added kick and my personal favorite, Feta!
Dairy:  Regular milk can be substituted for almond or oat milk.

Some of my favorite Frittata combinations are:
  • Broccoli and cheddar cheese
  • Spinach, onion and feta cheese
  • Ham and Swiss cheese
  • Bell pepper, onion, American cheese and ham
  • Diced yellow potatoes, green pepper, onion and cheddar cheese
  • Sausage and peppers

The great part of making a fritatta is the fact that it is super easy to make, but also that you can basically choose any of your favorite ingredients to toss in there and it will come out tasting amazing!

What can I serve with my Frittata?

There are plenty of sides that compliment your frittata. If you are serving it for breakfast or brunch, pancakes or waffles, french toast, scones, hash browns or home fries and even fresh fruit would all be some awesome choices. Oh and don’t forget the mimosas!
If you are serving it for lunch or a light dinner, you can try a side salad or a fresh loaf of bread.

Easy Vegetable Frittata

Ingredients
  

  • 8 large eggs beaten
  • 1/2 cup milk
  • 1/2 red onion finely chopped
  • 1 bell pepper finely chopped
  • 2 cups baby kale chopped
  • 1 cup shredded cheddar cheese
  • 1/2 tsp salt
  • 1/4 tsp ground pepper
  • dash of hot sauce optional

Instructions
 

  • Preheat the oven to 400℉.
  • In a large bowl, whisk the eggs, milk, shredded cheese, hot sauce, salt and pepper together. Set aside.
  • Heat 1/2 tbsp olive or avocado oil over medium heat in a frying pan. Add the onion and bell pepper. Cook until veggies are soft, about 3-4 minutes. Add chopped kale. Cook for 1 minute.
  • Add cooked veggies to a 10 inch pie dish. Pour egg mixture over the top. Bake uncovered in preheated oven for 25 minutes or until the center of the frittata no longer jiggly. Garnish with fresh parsley and serve.

Notes

Store any leftovers in an airtight container and it will safely keep in the fridge for up to 3-4 days. 
A cast iron pan would also work great for this recipe if you do not have a pie dish.
