Turkey Meatloaf

 

This turkey meatloaf is the ultimate comfort food and the healthier version of the classic beef meatloaf. Not only is it easy to make, but it pairs so well with many sides like mashed potatoes, sweet potatoes, twice baked potatoes, mac and cheese, green beans and the list goes on. The options are endless!

My red meat loving husband loves this turkey meatloaf recipe! It is a staple in my household that my whole family (kids included) absolutely love! I typically serve it to my kiddos with ketchup, because it is a sure way to get them to eat it. I’m pretty positive that most kids will eat just about anything that is dipped in ketchup!

 

What to do with the leftovers?

The leftovers will safely keep in the fridge for up to 3-4 days. The first obvious choice is a delicious meatloaf sandwich. However, I have also chopped up the leftovers, thrown it in marinara sauce (store bought or homemade) and tossed it over pasta! You now have another easy yet scrumptious meal for you and your family to enjoy.

 

Baking pan or loaf pan?

Either a baking pan or loaf pan will work just fine but I personally prefer to cook my meatloaf on the baking pan better. The tomato sauce is able to cover all sides of the meatloaf, browning perfectly at the bottom creating a deliciously wonderful turkey meatloaf masterpiece!

 


Ingredient list:

Ground turkey: I usually choose a 93% lean organic ground turkey.

Green bell pepper: For this recipe, finely chop half of the pepper to go into the meatloaf mix. Reserve the other half of the pepper and cut into slices for the top of the meatloaf. This step is optional, however, I think it makes the meatloaf look a bit fancier!

Onion: I use a sweet onion, such as a vidalia onion to help balance the acidity of the tomato sauce.

Worcestershire sauce: Whatever you do, do not skip this ingredient. This stuff is so darn good!

Seasoned bread crumbs: Be sure to get the seasoned bread crumbs. It adds a lot more flavor to the meatloaf. You can also purchase whole wheat bread crumbs to make it a bit healthier.

Parmesan cheese: Any grated parmesan cheese will work for this recipe. You can even buy a brick and grate it yourself if you feel up to it.

Tomato sauce: You can get any store bought 15 oz can of tomato sauce. While only a 1/2 cup of tomato sauce goes into the mix, the rest of the can is reserved to pour over the top of the meatloaf. Many meatloaf recipes typically call for ketchup, however, there is a ton of sugar in ketchup so I prefer to use the tomato sauce.

Garlic powder: I choose to use garlic powder as a time saver, but using fresh garlic would work great too!

Ingredients
  

  • 1 lb ground turkey
  • 1 green bell pepper 1/2 finely chopped, 1/2 sliced
  • 1 small onion finely chopped
  • 1 large egg
  • 1/3 cup seasoned bread crumbs
  • 1/4 cup grated parmesan cheese
  • 1 15oz can of tomato sauce divided
  • 1 tsp worcestershire sauce
  • 1 tsp garlic powder
  • salt and ground pepper to season

Instructions
 

  • Line a baking pan with foil and lightly spray with cooking spray. Preheat oven to 375℉.
  • In a large bowl, add ground turkey, chopped green pepper, onion, egg, bread crumbs, parmesan cheese, 1/2 cup of tomato sauce (rest reserved for top), worcestershire sauce, garlic powder, salt and pepper. Mix to combine.
  • Add meat mixture on prepared baking pan, form a loaf in the shape of a rectangle.
  • Pour the remaining can of tomato sauce over the top of the meatloaf. Then add the green pepper slices over the top.
  • Put meatloaf in preheated oven and bake for 45 minutes or until the internal temperature reaches 165℉.
  • Let the meatloaf rest for about 10 minutes before serving then enjoy!
